For those of you who have never worked in the food industry I can attest that it is a career that is mostly a labor of love. Long hours, challenging work, tough working conditions and a finicky public can make it seem like the day will never end BUT if you enjoy it, it fills your soul with satisfaction. Very soon a new restaurant will fill the old Donatello’s location. This actual labor of love will be opened by Danny Pilsbury and his silent partner as well as a friend of the couple who supports this dream, John Brusseau. Named Alexandra’s Bistro, the name is in memory of his wife Alexandra Puntin Pilsbury, who passed just recently after an 18-month battle with cancer. Danny and Alex met at Merrimack Valley High School and then worked and fell in love while working at the Lake Sunapee Country Club back in 2014. After high school she went to Western Carolina College while he was a sous chef in New London. She came back with a nursing degree and took a job at Concord Hospital as a nurse and soon after they got married the first time – which happened to be right when COVID reared its ugly head, so they had their “second” wedding for friends and family when the covid restrictions were lifted.
Soon they were talking about opening their own restaurant, but Alex grew ill and soon passed. Danny decided to keep the dream alive and the idea for a classic American Bistro formed. Influenced by French, Spanish and Asian flavored cuisine Alexandra’s will feature a rotating, seasonal menu featuring whatever is fresh at the time. Daily specials will be included on the menu and a full bar will be part of the atmosphere. The restaurant will start serving in early July from 5-9pm Wednesday – Sunday and will expand its hours as the business grows.
